Vidalia Onion Soup
I haven’t tried this recipe, but it sounded so good when I saw it on slashdot that I decided to save it here for future reference.
Slice a Vidalia onion thin and sweat it in some butter with a teaspoon of chopped garlic. Simmer until it’s brown – it’ll give up sugar that way (thank you Alton Brown).
Add beef broth with a dash of Worchestershire, sprinkle of dried parsley or oregano, croutons or toasted French bread slices, and a white cheese to cover (mozzarella, provolone, asiago, whatever floats your boat). Bake at 350 until cheese gets brown bubbles on it.
