Crock Pot Turkey Breast

This Recipe is courtesy of my mom. I’ve made it several times – it’s terribly convenient for lunches and stuff. Also, since frozen turkey breasts are $0.99/lb, it’s not a bad deal at all!

Savory Turkey Breast

Ingredients:
6-1/2 turkey breast, thawed
1 medium onion, chopped (about 1/2 cup)
1 stalk celery, chopped (about 1/2 cup)
1 bay leaf
1 tsp. salt
1/2 tsp ground pepper
1 tsp chicken bouillon granules (I use Herb Ox-less sodium)
1/2 cup water

Instructions:
Rinse turkey.? Place onion celery & bay leaf in cavity.? Place turkey in 5-qt crock pot.? Mix bouillon, water, salt and pepper.? Pour over turkey.? Cover and cook on low 9 hours or until juice of turkey is no longer pink when center is cut.? Remove bay leaf.

Notes:
Make sure the turkey is thawed all the way – if it is not totally thawed you may end up with undercooked parts in the middle. It can take several days if you leave the frozen turkey in the fridge (typically the safest way) or overnight if you just leave it out on the counter. See The Joy of Cooking for more information on thawing turkeys.

This was a really great recipe, though I didn’t put the veggies/bay leaf in the cavity (I just roughly cut them (not the bay leaf) and dumped them into the pot under the turkey.

But $0.99/lb for turkey breast? Not in my area! I wish… I think it was more than double that for my frozen turkey breast.
